Making applesauce



We called it "Cooking Science" and made applesauce during our homeschool day. We had two grocery bags full of apples from Vincents Orchard in Salem, Ohio.  They were not grade A and had some spots, but the mix of apple variety makes for good applesauce.  The bags were only $2 each; so a good bargin. 
After washing the apples, C. used our handy dandy apple corer and peeler. Then, we put the apples into the roaster with sugar, brown sugar, cinnamon and filtered water and let it cook for several hours.  Tomorrow we will fill quart canning jars and process.  We had fun seeing how long of an apple peel we could get.  As you can see from the picture, the winning peel was quite long!

Homemade Grape Juice Concentrate

The easy way!
Sterilize quart jars, lids and bands. 
Wash grapes (I used seedless red grapes, but use whatever kind you have.)
Use one cup of grapes and 1/2cup sugar per quart jar, then fill with hot water leaving 1inch of head space.
Place hot lids and rings on jars and put into water bath canner and process for 30 minutes.
To use, strain grapes out of juice or use a pitcher with a strainer.  You can add about 1/2 jar water to each quart of concentrate before serving.
